Ingredients
  

For the Wraps

  • 4 large whole wheat tortillas
  • 1 cup classic hummus
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 small purple cabbage shredded
  • 1 large carrot julienned
  • 1 cucumber thinly sliced
  • 1 cup baby spinach leaves
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Optional Additions

  • Crumbled feta cheese
  • Sliced avocado
  • Pickled red onions

Instructions
 

Prepare Vegetables

  • Wash all vegetables thoroughly
  • Slice bell peppers into thin strips
  • Julienne the carrot
  • Shred purple cabbage
  • Slice cucumber
  • Chop cilantro

Season Vegetables

  • In a mixing bowl, toss vegetables with olive oil
  • Add salt and pepper
  • Gently mix to distribute seasoning

Assemble Wraps

  • Lay out tortillas on clean surface
  • Spread 1/4 cup hummus on each tortilla
  • Layer vegetables evenly across tortillas
  • Add optional cheese or avocado if desired
  • Sprinkle fresh cilantro

Roll and Serve

  • Fold in sides of tortilla
  • Roll tightly from bottom up
  • Cut diagonally in half
  • Serve immediately
