For the Wraps

red bell pepper

Instructions
Prepare Vegetables
Wash all vegetables thoroughly
Slice bell peppers into thin strips
Julienne the carrot
Shred purple cabbage
Slice cucumber
Chop cilantro
Season Vegetables
In a mixing bowl, toss vegetables with olive oil
Add salt and pepper
Gently mix to distribute seasoning
Assemble Wraps
Lay out tortillas on clean surface
Spread 1/4 cup hummus on each tortilla
Layer vegetables evenly across tortillas
Add optional cheese or avocado if desired
Sprinkle fresh cilantro
Roll and Serve
Fold in sides of tortilla
Roll tightly from bottom up
Cut diagonally in half
Serve immediately
Notes
For extra protein, add grilled tofu or chickpeas
