- 2 15 oz cans chickpeas, drained and rinsed
- 3 tablespoons olive oil
- 1 medium onion diced
- 4 cloves garlic minced
- 2 cups cherry tomatoes halved
- 1 large bell pepper diced
- 2 cups fresh spinach
- 1 tablespoon Mediterranean seasoning blend
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh basil or parsley for garnish
- Lemon wedges for serving
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add garlic and cook for 30 seconds until fragrant.
Add chickpeas, Mediterranean seasoning, paprika, and cumin. Cook for 5 minutes, stirring occasionally.
Add bell pepper and tomatoes, cook for 5-7 minutes until tomatoes start to break down.
Stir in spinach and cook until wilted, about 2 minutes.
Season with salt and pepper to taste.
Top with crumbled feta and fresh herbs.
Serve with lemon wedges.
