Ingredients
  

  • 2 15 oz cans chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 cups cherry tomatoes halved
  • 1 large bell pepper diced
  • 2 cups fresh spinach
  • 1 tablespoon Mediterranean seasoning blend
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh basil or parsley for garnish
  • Lemon wedges for serving

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and cook until translucent, about 5 minutes.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add chickpeas, Mediterranean seasoning, paprika, and cumin. Cook for 5 minutes, stirring occasionally.
  • Add bell pepper and tomatoes, cook for 5-7 minutes until tomatoes start to break down.
  • Stir in spinach and cook until wilted, about 2 minutes.
  • Season with salt and pepper to taste.
  • Top with crumbled feta and fresh herbs.
  • Serve with lemon wedges.
